Centralize Log (prevent hacking)

I'm doing a project in my school, and we need to implement a kind of dashboard to centralise logs. I want to trigger an attack on my web server; get the log and display them on a dashboard. But I'm not able to hack my web server (apache). I would like to do something like a sql injection then analyse the logs.
Or else I would like to know if I can build a vulnerable web server to easily hack it.
I don't know if I was clear enough (I'm french)
