How do cloud apps access the internet through one's wifi?

There are all of these cloud apps that allow you to access your wifi-connected devices remotely. Nest is one of the most well known but many others also have this.



What is the basically technology involved? Do these apps set up a tunnel or do they use port forwarding via dynamic dns?



I am asking as I am trying to create a prototype app that "talks to" a locally wifi connected device.
